Avoid the processed sugars and weird ingredients from other coconut cream pie recipes and keep it natural. Low in sugar and using better-for-you ingredients, this one is a recipe keeper. Gluten Free, Vegan.
Ingredients
Crust

1 cup of Artisana Organics Coconut Granola
-
1/4 cup of Artisana Organics Coconut Oil
Filling
-
1/2 cup of coconut yogurt
-
2 tbsp of organic corn starch
-
1 tsp of vanilla extract
-
1/4 tsp of almond extract
-
1/4 cup of unsweetened shredded coconut
-
1/3 cup of granulated monk fruit
Topping
-
2 Tbsp of toasted unsweetened shredded coconut

2 slices of dried pineapple
Directions
Preheat the oven to 325F.
Crumble up the granola in a blender or food processor.
Mix in with coconut oil and press the crust dough and bake for 15 minutes. Let it cool down.
Mix the ingredients for the filling and top each tart with it, refrigerate for 2 hours (optional but recommended), top with coconut and pineapple. Enjoy!
