Your childhood favorites in a better for you form! These fluffy cupcakes are the perfect treat to wow your family or make for gatherings. Made with better, organic ingredients including our almond butter and cacao spread, you can offer and enjoy knowing you are not eating artificial ingredients and preservatives. With a decadent rich chocolate ganache, it's a dream come true. Gluten-free, refined sugar free, dairy-free optional, kid friendly.
1/2 cup dark chocolate, melted
1/2 cup Artisana Organics Almond Butter
1/3 cup pure maple syrup
1 cup unsweetened applesauce
1 tsp vanilla
1/4 cup arrowroot flour
1/4 cup + 1 tbsp coconut flour
2 tbsp cocoa powder
1 tsp baking powder
6 Tbsp Artisana Organics cacao cashew spread
3 Tbsp dark chocolate chips
Organic vanilla icing, or 4 oz cream cheese (vegan alternative possible) whipped with 2 Tbsp powdered monk fruit & 1/2 tsp vanilla for sugar free.
Preheat oven to 350F
Make cupcakes by whisking wet ingredients together, then mix in dry Pour into 9 silicone cupcake liners
Bake at 350 for 28-30 min , allow to cool for 10 min, then remove from pan and onto cooling rack
Make ganache by melting chocolate and whisking with the cacao cashew spread until smooth and creamy. Use a cupcake corer, or apple corer , or tsp to carve out the center of your cupcakes. Pipe your filling inside and pour and smooth ganache filling overtop, and allow ganache to set in the fridge.
Then with a small piping tool make your traditional hostess cupcake icing swirls
