A fresh and crunchy mediterranean inspired salad using our almond butter and orange blossom for the dressing. Dairy-free, Gluten-Free
Ingredients
Salad

1 large navel orange (or whichever variety you prefer)

Vegan feta cheese, cut cubed
Dressing
-
1 heaping Tbsp Artisana Organics Almond Butter
-
1 tsp Orange blossom water
-
1 Tbsp raw honey
-
1 Tbsp rice vinegar
-
1-2 Tbsp olive oil
-
Handful of fresh thyme leaves
-
Handful of fresh basil
-
Dash of water
-
Salt and pepper to taste
Directions
Thinly slice in a diagonal direction the asparagus- make sure they are really thin, to keep a nice raw crunch to them.
Slice off all the skin of the orange and all the white, leaving just the orange. Slice out pieces from each quadrant.
Prepare the dressing by thinly cutting the basil leaves. Add all ingredients in a mason jar and with a fork stir and mix thoroughly together. The fresh basil and thyme will add an extra bit of herbal spice to the palate.
Mix the asparagus and orange slices together and add in cubed vegan feta cheese. Pour the dressing over the salad and serve.
