Fruity Cashew Granola Bars

Mixing in some summer stone fruit and our Cashew butter, this granola bar recipe is perfect for an afternoon fix when you want a better-for-you sweet treat.
Ingredients

1.5 cups oats

1/2 cup Artisana Organics Cashew Butter

1/2 cup crisp rice cereal

1/2 cup oat flour

1/2 tsp cinnamon

1/2 tsp salt

1 cup raw cashews
-
1/2 cup dried cherries
-
3/4 cup dried apricots, chopped

4 Tbsp olive oil
-
1/4 cup honey or maple syrup
-
1 Tbsp water
*Optional cashew drizzle

3 Tbsp Artisana Organics cashew butter
-
3 Tbsp coconut sugar
-
1 tsp water, more if needed

Whisk all together and drizzle over the top of cooled bars
Directions
Preheat oven to 350F. Then line an 8x8 inch pan with parchment paper so it hangs over 2 sides and grease generously.
In a large bowl mix all the dried ingredients (oats, rice cereal, oat flour, fruit, nuts, spices.) Then in a small bowl whisk the cashew butter, oil, honey and water.
Pour the wet ingredients into the dry ingredients and mix well. Press firmly into the prepared pans. Bake for 40-45 minutes, until the top is golden brown. Cool completely before cutting.
Store in the fridge to prevent crumbling.
